Takuan—a beloved Japanese pickled Daikon radish.The process begins with carefully selecting Daikon (that produced in Miyazaki Prefecture),which is washed to a pristine white before being placed on traditional two-roofed shelves for drying.Over the next two weeks,these radishes are sun-dried to perfection, a practice that has been passed down through generations.

Once dried, each radish is carefully pickled using natural ingredients: sun-dried salt, chili peppers, and domestically sourced rice bran. The Daikon is then left to undergo a slow, low-temperature fermentation process, which enhances its flavors and nutritional profile. This method is not just about preserving the radish—it’s about crafting a product that’s as healthy as it is delicious.

Kimura Pickles’ Takuan products are free from any artificial additives, and some items only contain naturally derived food preservatives. As a result, they are sometimes used as ingredients in macrobiotic cooking.

In addition to helping regulate blood pressure and promoting liver health, the Takuan also contains GABA, which is known for its relaxing and anti-stress effects. Remarkably, this Takuan contains 30 to 90 milligrams of GABA per 100 grams— a significantly high amount compared to other GABA-rich foods.

In fact, the sun-dried Daikon that forms the base of Kimura Pickles’ Takuan contains 1.8 times the fiber found in fresh Daikon radish.
